Growing Conditions

The Sauvignon Blanc grapes were grown in Pope Valley at an elevation 715 feet on the Whisky River Ranch using sustainable farming practices. Hot daytime temperatures ripen the fruit to express creamy, luscious tropical fruit and rich citrus flavors and cool nights maintain beautiful acidity.

Harvest

Harvested in late September, the fruit reaches optimum ripeness in an excellent growing season. Consistent temperatures in the mid to high 80’s allowed the fruit to mature evenly without major heat spikes, causing dehydration. The grapes at harvest were bursting with delicious fruitiness.

Aging

Stainless steel fermented and held for 6 months.

Food Pairing

Sip as an aperitif. Pair with sole sautéed in butter with capers, mild Brie cheese, roasted fig pizza, 50% milk chocolate.
