Growing Conditions
Sauvignon Blanc grapes were grown in the historic, sustainably farmed award winning Jaxon Keys Vineyard in Mendocino AVA. Northern California cool evening fog preserves beautiful acidity and its warm days offer optimum ripening. The Chardonnay was grown in the cool climate Oak Knoll District, Napa Valley.
The 2010 vintage had a very cool growing season with early fall rains resulting in smaller yields, but crispy and juicy fruit. This growing season retained Sauvignon Blanc acidity, that waters the palette in anticipation of the next sip.

Winemaking
A touch of Chardonnay added to the Sauvignon Blanc to soften the citrus flavor profile into a delightful crisp, yet elegant wine with a round texture.
Aging
Stainless steel fermented and held for 6 months, then blended with Chardonnay, that had been aged in only 30% new French Oak Barrels.
Food Pairing
Sip as an aperitif. Pair with fresh or BBQ oysters, fritto misto, sautéed trout and soft cheeses- a winery favorite is goat cheese rolled in crushed cashews. Drinkable now.
