Nose

The rich and complex aromas are accentuated
by the natural ripeness of our grapes with hints of red
apple, wild strawberries, golden apple and apricot, as
well as spicy tones of roasted nuts, white chocolate and
honeysuckle.

Palate

On the palate, it is an explosion of berry
flavors, with layers of fresh fig, cherry and vanilla
beans, underlined by a refreshing acidity. The lasting
finish is dominated by biscuit, toast and nutty flavors.

Growing Conditions

DVX, our prestigious tête de cuvée, honors the late
Guy Devaux, founding winemaker of Mumm Napa.
The grapes for DVX come from a half-dozen of our
very best vineyard sources. Only 7 lots of Chardonnay and Pinot Noir
were selected for the final 2007 DVX blend

Winemaking

Twenty-one percent of the wine volume was barrel
fermented and aged to add depth and spiciness. Ten
percent of the blend completed Malolactic fermentation
for a round and creamy mid-palate structure.

Aging

The blend
was aged on the yeasts six years in the bottle, adding
creaminess and soft notes and flavors. The wine was
disgorged as a brut style and aged another six months
on the cork before release.

Food Pairing

Perfect on its own as an evening starter, it
will also be a perfect match for a wide selection of
foods, from Italian dishes to poultry.
