Nose

Enticing aromas of
hibiscus and juicy watermelon emerge from the glass and intermingle
with hints of ruby grapefruit, white nectarine and ripe kiwi.

Palate

Juicy
strawberry, sweet white raspberry and subtle hints of white tea fill the
palate, leading into a lengthy, clean finish supported by impeccable
balance and mouthwatering acidity.

Growing Conditions

Using the same estate-grown fruit from which our
acclaimed Bordeaux-style Cabernets are created, this dry rosé is made
from 50% Cabernet Sauvignon and 50% Merlot. Encantado, which means
“charmed” or “enchanted” in Spanish, reflects a playful side of our
portfolio. In the classic style of Old World rosé, this wine boasts floral,
fruity aromatics and a crisp, clean finish.

Bottling

The finished wine was bottled in December
2015 to capture the freshness and radiance of the young wine.

Winemaking

Our rosé is produced using the saignée
method, in which the first juice is drained from the must of our estate
grown Cabernet Sauvignon and Merlot. This French method is designed
to concentrate the red wine while simultaneously yielding delicately
fruity and lively aromas in the young vin gris. To capture these flavors,
the juice underwent a slow, cold fermentation in stainless steel with yeast
selected especially for rosé.

Appearance

Showing a bright watermelon hue in the
glass, our 2015 rosé is bright and refreshing.

Food Pairing

This vibrant wine can be enjoyed as
an apertif, but would also pair well with fresh-shucked oysters or citrus
and fennel salad.
