Nose

Inviting fruit aromas of
white flowers and strawberry emerge from the glass and intermingle with
notes of ruby grapefruit, prickly pear and ripe summer watermelon.

Palate

Juicy
blood orange, sweet starfruit and subtle hints of guava fill the palate,
leading to a lengthy, clean finish supported by bright acidity.

Growing Conditions

Using the same estate-grown fruit from which our
acclaimed Bordeaux-style Cabernets are created, this dry rosé is made
from 50% Cabernet Sauvignon and 50% Merlot. Encantado, which means
“charmed” or “enchanted” in Spanish, reflects a playful side of our
portfolio. In the classic style of Old World rosé, this wine boasts floral,
fruity aromatics and a crisp, clean finish.

Bottling

The finished wine was bottled in January 2015
to capture the freshness and radiance of the young wine.

Winemaking

Our rosé is produced using the saignée
method, in which the first juice is drained from the must of our estate
grown Cabernet Sauvignon and Merlot. This French method is designed
to concentrate the red wine while simultaneously yielding delicately
fruity and lively aromas in the young vin gris. To capture these flavors,
the juice underwent a slow, cold fermentation in stainless steel with yeast
selected especially for rosé.

Appearance

Showing a bright watermelon hue in the
glass, our 2014 rosé is cheerful and refreshing.

Food Pairing

This
invigorating wine makes for a delectable warm-weather treat on its own,
but may also be enjoyed with ahi crudo, fresh crab salad or your favorite
triple-crème cheese.
