Nose
Bright and lively, our 2010 encantado
presents a fragrant, fruity bouquet of strawberry, juicy watermelon and
white peach against a background of Meyer lemon peel and white
florals.
Palate
Vibrant acidity and luscious flavors of nectarine, pineapple and
white raspberry light up the palate, followed by fresh strawberries and
cream on the finish.
Growing Conditions
Using the same estate-grown varietals that contribute to
our acclaimed Bordeaux style wines, this refreshing rosé is a blend of
equal parts Cabernet Sauvignon and Merlot. Encantado, which means
“charmed” or “enchanted” in Spanish, reflects a playful side of our
portfolio. In the classic style of Old World rosé, this wine boasts floral,
fruity aromatics and has been blended for a crisp, clean finish.
Bottling
The finished wine was bottled in July
2011 to capture the freshness and radiance of the young wine.
Winemaking
Our rosé is produced using the saignée
method, in which the first juice pressed is extracted from the must of
our estate grown red varietals. This French method is designed to
concentrate the red wine while simultaneously yielding delicately fruity
and lively aromas in the young vin gris. To capture these flavors, the
juice was treated to a slow, cold fermentation in stainless steel with
yeast selected especially for rosé.
Food Pairing
This crisp and dry rosé can easily be enjoyed as an
apertif, but would also pair famously with a selection of salumi or a
refreshing summer salad.
