Nose
Enticing fruit aromas of ripe strawberry and juicy watermelon spring
from the glass, accompanied by hints of lemon crème, citrus blossom and
subtle wet stone minerality.
Palate
Mouthwatering white nectarine, blood
orange and ruby grapefruit dance on the palate, joined by refreshing
acidity and lending balance to a lengthy, refreshing finish. This exuberant
bottling makes a fabulous warm-weather aperitif, but it is also versatile
enough to pair nicely with fresh oysters, smoked salmon salad or your
favorite triple-crème cheese.
Growing Conditions
Using the same estate-grown fruit from which our
acclaimed Bordeaux-style Cabernets are created, this dry rosé is made
from 47% Cabernet Sauvignon and 46% Merlot and 7% Malbec. Encantado,
which means “charmed” or “enchanted” in Spanish, reflects a playful side
of our portfolio. In the classic style of Old World rosé, this wine boasts
floral, fruity aromatics and a crisp, clean finish.
Bottling
The finished wine was bottled in
January 2014 to capture the freshness and radiance of the young wine.
Winemaking
Our rosé is produced using the saignée
method, in which the first juice is drained from the must of our estate
grown Cabernet Sauvignon, Merlot and Malbec. This French method is
designed to concentrate the red wine while simultaneously yielding
delicately fruity and lively aromas in the young vin gris. To capture these
flavors, the juice underwent a slow, cold fermentation in stainless steel
with yeast selected especially for rosé.
