Winemaking

The Cabernet includes a small percentage of Petite Verdot, that grows next to the lavender field. The 2011 vintage was a cool growing year, which evolved into a well structured wine with gracefully expression of fruit. The wine has 4 years of aging in French oak, a rare attribute that allows gentle integrated of tannins, fruit and oak elements, creating a wine that is ultimately smooth and expressive.
