Nose

Aromas include blackberry, cherry, campfire, sage, earthiness, plum, ripe pear, raspberry, cedar and honey.

Palate

This wine approaches the palate with refreshing acidity and chalky tannins that are complemented with flavors of currants, plum, peppermint chocolate, cigar box and raspberry. All of this harmoniously comes together and ends with a long smooth finish.

Growing Conditions

Only the second vintage of our highly requested Cabernet Sauvignon from Diamond Mountain and it’s already showing beautifully.

Aging

Aged in primarily new French oak barrels for 18-22 months that allow for extended cellar time.

Food Pairing

Will pair nicely with pot roast with sweet onion pearls, bbq chicken, charcuterie plate, porterhouse steak with grilled seasonal vegetables and aged cheddars.
