Nose

Aromas include watermelon rind, grapefruit, lemon blossom, Satsuma orange.

Palate

In the mouth- bright, moderate acidity that hits up front and carries through to the back, then leads to a round, enjoyable finish. Some flavors that appear are tart cherry, strawberry, Meyer lemon and Granny Smith apples.

Growing Conditions

The fruit for our 2016 Tous Ensemble Rosé was sourced from two vineyard sites, located in Mendocino County: Draxton and Yorkville. Although both vineyards are new sites for us to work with, we were excited to continue to source our grapes for our Rosé from Mendocino County.

Winemaking

Staying true to our philosophy of producing wines that emulate our French colleagues (lower alcohol, higher acid wines), we called the vineyard picks on the early side, with the juice resulting in an average Brix of 20.7. While some winemakers use the saignee method to make their Rosé, we decided to send our grapes destined for this Rosé directly to the press. This ultimately allows us to have more control over the color and flavor extraction, and produce a better Rosé that is consistent with the Copain style. We allow the natural yeast present in the winery to spontaneously carry out fermentation, until it reaches complete dryness.
