Our 2012 Cuvee Rouge is more than just a pretty face, says winery president Tom Davies. It's a bottle of bubbly that tastes as good as it looks! Recently dubbed CR, this sparkler is made from the same grape, Valdiguie (or Napa Gamay), as our very popular Gamay Rouge. It is produced in the typical rose style where free run and lightly pressed juice remains in contact with its grape skins. The CR is pumped over daily to extract color and richness and is then finally pressed off, cold-settled and fermented before being tirage-bottled in the traditional methode champenoise.
Stainless steel fermentation, and aged for over 24 months on the yeast.
