Winemaking
This third vintage of Mimi’s Rosé began with the early pick of designated Cabernet Sauvignon rows. The grapes were gently whole-cluster pressed, followed by cool fermentation in stainless steel tanks. The Merlot arrived soon after and was gently pressed and left on the skins for two days to capture the classic Merlot flavors of raspberry and strawberry. A second pick addition of Cabernet Sauvignon rounded out the wine, delivering the final body and balanced structure.

Serve this versatile wine chilled with seafood, sushi, or salads. For a contrast pairing, the wine could also be paired with more hearty dishes such as stews, paella, or roasted duck.
