Nose
An elegant nose of deep plum, black cherry, caramel and burnt embers.
Palate
Dark fruit, cassis, mocha and moist earth flavors in the mouth. The lush and fruit filled palate is balanced by woody notes and tannins that have begun to soften. Hailing from a stellar vintage, this is an ample, fleshy and accessible wine with a silky, smooth finish.
Growing Conditions
Seavey's ninth estate-produced Caravina, the 2007, is a remarkable representation of our vineyard's terroir. The 2007 growing season was one of even temperatures from early spring through fall. We harvested from our Cabernet blocks beginning in the first days of September, with the last micro-block picked on October 13th. The 2007 Caravina was made from grapes that came from vines planted in several different locations of the south-facing hillside vineyard.

Winemaking
Winemaking style followed classic Bordeaux methods. Harvested at optimal ripeness, the juice remained in contact with the skins for an average of 15 days, with malolactic fermentation occurring in barrel.
