Nose

A bouquet reminiscent of roses, ripe cherries and smoke.

Palate

Rich flavors of black cherry and strawberry, all finishing with hints of tobacco and spicy new oak.

Growing Conditions

These barrels best represent the unique characteristics of our two favorite blocks 9 and 10. The fruity exuberance of the Dijon clone in block 10 is tempered by the weighty meatiness and smokiness of the Pommard clone in Block 9.

Bottling

1.5L magnum bottle.

Winemaking

Block 9: fermented 9 days in stainless steel punch-down fermenter, with cap submersion at 8 to 12 hour intervals.
Block 10: fermented in 3/4 ton bins with punchdown 2 to 3 times per day.

Aging

Aged 16 months in 1 year old French oak barrels.
