Fragrances of cinnamon, bing cherries, vanilla, black tea, sage and a unique cocoa aroma.
Palate
Ripe cherry and plum, followed by baking spices and a wet stone minerality hinting of pencil lead.
Growing Conditions
Extremely limited irrigation to encourage vine stress; 100% Napa Valley Fruit; Clone 7 and 337 (St Helena AVA), Clone 6 (Oak Knoll AVA) and Clone 169 (Calistoga AVA).
Harvest
Whole cluster hand-sorted.
Winemaking
Five day cold-soak prior to 16 day whole berry fermentation.
Aging
20 Months in French Oak, 12 Months bottle aging.
