Palate

Designed to age, we refer to this special design as a “red-wine drinkers
white”. Intriguing aromas of
honeyed herb tea over spice, minerals, mangoes and melon with notes
of quince, clove and white fig. Add to that is the added complexity,
depth and texture that the extended oak aging contributes (no woody,
oaky, or toasty elements)

Growing Conditions

A perfect compliment to the Bordeaux styled red wines of Cabernet,
Franc, Merlot. This is modeled after the greatest white, Haut Brion
Blanc. This wine is built to age perhaps even better than most of its
red counterparts. This is made from the same vineyard that Mitch
Cosentino made the 1993 White Meritage “The Novelist” for his old
namesake winery. The ’93 today is an amazingly young balanced wine
that is nearly perfect in 2014 at the age of 21 years!

Winemaking

The Sauvignon Blanc portion was fermented cold and slowlyin a
stainless tank and partially barrel aged. The Semillon component was
completely fermented in special oak barrels made in France for
Sauvignon Blanc and Semillon.

Aging

It was then aged on the lees and stirred
weekly. The blend was made only a few weeks before bottling. There
was NO secondary malolactic fermentation involved.
