Nose
A luminous bouquet of sweet black cherry, blueberry and
raspberry fruit, shrouded with tones of briar, sweet cloves and baking spice emanates
from the glass.
Palate
Mirroring the nose, the full, resplendent palate
floods with juicy blackberry, supple black raspberry and Bing cherry fruit, followed by
touches of red licorice, brown butter and toasted vanilla. Firm, chewy tannins provide
balance and a robust structure that last throughout the graceful, lingering finish.
Growing Conditions

The berries were hand-harvested at night, carefully sorted and
destemmed to tank, where fermentation took place.
Aging
60%
new French oak barrels, where it was aged for 18 months prior to bottling.
Appearance
A dark garnet wine.
Food Pairing
This robust yet balanced Cabernet would prove a delicious pairing for
braised meat, such as Moroccan lamb shanks with pomegranate, mint and French
lentils. For a delightful cheese course, try this wine with Nicasio Square, a semi-soft
cow’s milk cheese from California.
