Nose
Initial aromas of cola, cherry and cigar box segue to hints of chocolate toffee, dried currant and
allspice.
Palate
Firm and silky upon entry, the 2004 Oakville Cabernet shines with layered fl avors of bright cherry, currant,
dried blueberry and milk chocolate. Firm, chewy tannins grip the fruit and reveal a long, persistent fi nish accented by
tobacco, sugar and toffee. This wine may be enjoyed now or cellared for ten years or more.
Harvest
The grapes were harvested from mid-September until mid-October 2004.
Bottling
Bottling in June 2006.
Winemaking
The juice was pumped
over traditionally and macerated on the skins for up to 40 days before being transferred to barrel for malolactic
fermentation.
Aging
The wine was aged in French oak barrels for 16 months.
