Nose

This wine presents a savory and fragrant
bouquet teeming with fresh fruit notes of black cherry and crushed blackberry, infused
with hints of clove, toasted oak and enticing umami.

Palate

The palate is ample and complex,
opening with layers of roasted black plum, cocoa powder and sweet vanilla that give
way to touches of caramel, blueberry preserves and espresso bean. The finish is
luscious and lingering, framed by fine tannins and bright acidity.

Growing Conditions

2013 was an ideal seaon in Napa Valley, with dry
conditions and a long, sunny summer, allowing even ripening and yielding exquisite,
balanced fruit.

The fruit for our 2013 Cave 7 Cabernet Sauvignon was specially chosen
from a collection of our favorite vineyards across our estate vineyards. The majority
of this vintage’s grapes were sourced from our select blocks in Oakville, with a small
amount coming from our Howell Mountain vineyard.

Harvest

The fruit for this wine was harvested at an optimal level of ripeness in
early October.

Winemaking

Fermentation took place at a high temperature to ensure that maximum
extraction was achieved.

Aging

Racked to 40% new French oak barrels. The
wine was aged in barrel for a total of 18 months before bottling.

Appearance

Deep garnet in the glass.

Food Pairing

Smooth and elegant, this vintage of our Cave 7 Cabernet would make
a delectable pairing for a simple yet hearty dish, such as grilled venison steaks with
rosemary potatoes, or a lamb burger with feta, arugula and grilled onion. It would also
partner wonderfully with Taleggio, a semi-soft cow’s milk cheese from Italy.
