Nose
this wine presents an intricately-woven and fragrant bouquet abounding
with fresh fruit notes of sweet red cherry, crisp raspberry and crushed blackberry, infused with wisps of
salted toffee, spun sugar and vanilla toast.
Palate
The ample palate opens with a rush of sweet red plum and
blueberry preserves, highlighted by notes of fine baker’s cocoa, espresso bean and sweet vanilla oak that
linger through the velvety finish, supported by supple tannins.
Growing Conditions
The 2010 vintage was cooler than usual during the growing season, but ended with a heat wave.
The fruit for our 2010 Cave 7 Cabernet Sauvignon was specially chosen from a collection of our
favorite vineyards across our 200 acres of estate property. The majority of this vintage’s grapes were
sourced from our select blocks in Oakville as well as the winery’s home Stags Leap District vineyard.
Harvest
The fruit for this wine was harvested at an optimal level of ripeness late September through
mid-October.
Winemaking
Fermentation took place at a high temperature to ensure that maximum extraction was
achieved.
Aging
Racked to 30% new French oak barrels. The wine was aged in barrel for a
total of 18 months before bottling.
Appearance
Deep ruby-black in the glass.
Food Pairing
Complex and elegant, this wine would make a handsome pairing for a simple yet ample dish, such as a
crispy roast goose with potato confit. This opulent wine would also dazzle the palate when paired with
a rich, nutty cheese like Gruyére.
