Nose

An opulent bouquet
of intense and enticing red berry and candied cherry aromas, shrouded in wisps of
dried rose, bay leaf and cinnamon sugar toast.

Palate

The palate is dense and sumptuous,
opening with luscious dark fruit flavors of blackberry preserves and black cherry tart
that give way to touches of dark baking chocolate, olive tapenade and tobacco leaf.
The finish is supple and lingering, framed by fine tannins and a touch of smoky oak.

Growing Conditions

The mild 2011 vintage allowed for a long hang time,
resulting in evenly ripe, complex flavors in the berries.

The fruit for our 2011 Cave 7 Cabernet Sauvignon was specially chosen
from a collection of our favorite vineyards across our 200 acres of estate property. The
majority of this vintage’s grapes were sourced from our select blocks in Rutherford and
Oakville as well as the winery’s home Stags Leap District vineyard.

Harvest

The fruit for this wine was harvested
at an optimal level of ripeness late September to late October.

Winemaking

Fermentation took place
at a high temperature to ensure that maximum extraction was achieved.

Aging

Racked to 30% new French oak barrels. The wine was aged in barrel for a total of 18
months before bottling

Appearance

A dense ruby wine.

Food Pairing

Deep and alluring, this vintage of our Cave 7 Cabernet would prove an
excellent foil to a hearty meal, such as pan-roasted duck breast with winter squash and
huckleberry sauce, or a portobello mushroom burger with grilled onions, spinach and
sun-dried tomatoes. It would also partner deliciously with Abbaye de Belloc, a Basque
ewe’s milk cheese.
