Nose

An ample bouquet filled with notes
of ripe black plum and marionberry, balanced by hints of dark mocha, dried rose petals and allspice.

Palate

The wine is smooth
and rounded on the palate and enters with a rush of plum preserves and ripe blueberry fruits, then follows with cherry cola,
baker’s cocoa and fresh ground cinnamon flavors that endure through the velvety finish.

Growing Conditions

With steadily mild temperatures throughout the growing season, the 2009 vintage progressed very smoothly and the
clusters ripened evenly.

The fruit for our 2009 Cave 7 Cabernet Sauvignon was specially chosen from a collection of our favorite vineyards across
our 200 acres of estate property. The majority of this vintage’s grapes were sourced from our select blocks in Rutherford as
well as the winery’s home Stags Leap District vineyard.

Harvest

The fruit for this wine was harvested mid-September through late October and was thoroughly
sorted.

Winemaking

Fermentation took place at a high temperature to ensure that maximum extraction was achieved.

Aging

Racked to 30% new French oak barrels. The wine was aged in barrel for a total of 19 months before bottling.

Appearance

Bold and luscious, this well-crafted Cabernet presents a dark garnet hue in the glass.

Food Pairing

Big and complex, yet graceful, this wine would partner perfectly with a hearty, savory meal such as braised wild boar
over creamy polenta. Pecorino, a hard Italian cheese made from ewe’s milk, would make a lovely cheese course when
paired with this extraordinary bottling.
