Nose

Toasted nuts and sweet vanilla from oak aging, pie crust, and cinnamon are layered with dark ripe cherries.

Palate

On the palate, the fresh ripe red fruit flavors combine with caramel, brown sugar, and a hint of white pepper. Complex and layered, the Cave 7 is a well-integrated wine with velvety tannins, mouthwatering acidity, and a lasting sweet finish.

Growing Conditions

The fruit for this vintage was chosen from our premier vineyard sites
throughout the Napa Valley, mainly the Rutherford and Oakville appellations. The
bright, ripe fruit and substantial mouthfeel that characterize this complex bottling are a
direct result of the meticulous care and attention to detail paid by our vineyard workers
to the vines.

Following several years of drought, February delivered much-needed rain to the vines. Budbreak occurred early in 2015 due to warmer than normal temperatures in late winter and early spring. Warm temperatures and abundant sunshine June through October led to good growth the rest of the season, an early harvest, and very high-quality, balanced fruit.

Aging

The wine was aged in barrel for a total of 17 months before bottling.

Appearance

The deep, dark ruby color is brooding, but the aromas are inviting.

Food Pairing

The tannin structure of this wine would pair perfectly with a beef cheek Bourguignon and a salad of baby arugula and big shavings of Parmigiano–Reggiano cheese. A graceful, balanced wine, it pairs beautifully with Piave, a cheese that tastes like a cross between a young Parmigiano–Reggiano and a Cheddar.
