Nose

Plum, cherry, ash, tar, toffee, red currant, cedar, cocoa powder, roast duck, rosemary, bay.

Palate

Finishes with sage, cherry, plum and cocoa powder buttressed by robust tannins with polished corners for aging.

While approachable now, the tannins innate to our wine would benefit from aging and promise a long drinking window.

Growing Conditions

The 2014 vintage showcases increasing complexity and sense of place as our vineyard continues to mature and deepen. Elegantly structured and aromatic, this wine expresses both bright and earthy notes.

Bottling

Bottled unfiltered and unfined.

Winemaking

We are quite excited about the 2014 The Ravens, as it marks our first vintage working with Tuscan amphorae. These handmade, terra-cotta vessels show the pure taste of our Cabernet Sauvignon without the influence of oak. Although comprising only 20% of the blend, the amphora-aged portion adds a distinctly mineral freshness to the finished wine.

Aging

The wine is aged for over 20 months in amphora and French oak barrels made by small-production coopers.
