Palate

Our steel-fermented, un-oaked Chardonnay is bright and crisp and shows off its flavors of citrus, grapefruit and green apple.

Growing Conditions

Fog and wind in the southern Sonoma Carneros region cooled these grapes, grown mostly at our Jacuzzi Estate Ranch. This is the final vintage from this block; our oldest chardonnay vines are being replaced with selected chardonnay clones. This particular vineyard ranges from gentle slopes to flat land, with a range of deep to shallow loams, clay and gravel.

Winemaking

Grapes were handpicked and de-stemmed, then pumped to our tank press where the juice was gently extracted. The juice was pumped to a settling tank and cooled to 55 degrees F for 24 hours. It contained very low solids when it was racked (decanted) to the fermenting tank. A pure wine yeast was added and the fermentation was held at 55 degrees to maintain the fresh fruit character.

Food Pairing

This wine is an excellent companion for many types of food because of its bright acidity and fresh fruit. Try it with grilled Salmon or chicken.
