Nose

Spicy blackcurrant and black cherry coupled with toasty oak, dried herbs, cinnamon and clove, help to describe the nose of the 2010 Sycamore Vineyard. The wine has great depth of black fruits with a strong expression of sweet black cherry. There is a complexity in the nose that hints of tobacco and a briary thicket.

Palate

This full-bodied cabernet sauvignon has well-integrated tannin which yields a very pleasant, fruitful finish

Growing Conditions

The cool wet winter continued into the spring, delaying bud break, flowering and fruit set by at least two weeks. The set was low, with a lower than average crop size in general. The summer temperatures were below normal as well, prolonging the growing cycle, delaying veraison and harvest. There was a two day heat spike in mid August that caused sunburnt damage which unfortunately cost us some of the fruit. The sunburnt fruit was separated on the vine or on the sorting table. The harvest was delayed, yet had plenty of time to achieve maturity before the rains arrived.

Winemaking

After a five day cold soak, fermentation was in stainless steel fermentors at 75°-86° F for 10-28 days skin contact.
