Nose
A back bone of sweet blackcurrant, Bing cherry and a herbal complexity that is reminiscent of forest floor, sagebrush and juniper. The oak adds a nice light spice, like clove, cedar, vanilla and toast. The depth in the nose has a complexity of dark chocolate and a hint of dried herbs.
Palate
The entry is full and promising with dark fruit flavors, while the tannins are maturing nicely. With lots of depth, this wine is floral, juicy and rich; a great example of a refined mountain cabernet.
Winemaking
5 day cold soak, inoculated with D245 and Melody yeast, 10 day fermentation at 88°F at the peak, with a total of 23 days of skin contact.
Aging
Barrels: 84 % new French Oak Cooperage: Taransaud, Seguin Moreau, Nadalie, DemptosAged in Barrel: 903 days.
Appearance
This wine is dark, opaque, ruby in color.
