Nose

The wine opens up with classic Bordeaux aromas of cassis, granite and black
currant.

Palate

On the palate the wine has a plush texture, reflecting the beautiful integration of
ripe, dark fruit and smooth, refined tannins. The finish is long and persistent, with
flavors of sweet fruit, nutmeg, black pepper and cigar box lingering on the palate.

Winemaking

The grapes are hand-harvested and gently crushed to retain 40% whole berries. Color extraction uses a combination
of destelage (draining juice and returning over the skins), with gentle cap irrigations. The grapes were drained and
pressed at dryness. The free-run and press wines were kept separate. Following fermentation the wine went through
malo-lactic fermentation in barrel and was then blended. The blended wine was aged in 81% French oak barrels for
20 months and racked several times to naturally clarify the wine and soften the tannins. With no filtration or fining,
the wine was laid down in bottle for 6 months of aging prior to release.
