Palate

The
palate is very reminiscent of a young Bordeaux Cabernet sauvignon with its medium plus
acidity, seamless tannins, red fruits, graphite, and spicy French oak notes with a long and
lean finish; the earth and oak notes develop delightfully for over a minute.

Aging

20 months in 90% French Oak, 10% American Oak, 64% New

Food Pairing

A rare treat,
this Cabernet doesn’t need a food pairing because of its delicacy, but it would do well with
roasted duck, lamb chops, or with a savory charcuterie plate.
