Growing Conditions

The fruit for this wine comes primarily from two blocks of our Mario’s Vineyard. This jewel of a site surrounds our winery in St. Helena, running along a narrow, 13-acre stretch formed by river erosion. Its northwest exposure, coupled with a mix of gravel, loam and alluvial soils, makes it ideally suited for a classic style of Cabernet Sauvignon: red fruit driven with savory and floral notes and a medium body.

Winemaking

In the cellar, All the Hats Cabernet Sauvignon undergoes a cooler fermentation, targeting less extraction and more red and floral notes. The wine is carefully aged in a mix of used oak and new French oak with a medium toast profile to ensure the delicate aromatics and flavors are not covered up. The Cabernet Franc hails from Howell Mountain and adds violet, red fruit and lengthy tannins to the finished wine.
