Palate
Our most rare and beloved Cabernet Sauvignon leads with dark fruit aromas layered with integrated floral notes. This wine is fresh and supple on the palate with flavors of blueberry, blackberry, and red currant supported by dusty, fine-grained tannins and hints of cedar and sage. The elegant structure and balance culminate in an uplifting, lengthy finish.
Growing Conditions
Record-breaking winter rains filled our reservoirs and recharged the soil. Spring and early summer were warm, leading to very strong growth in the vines. The rest of the summer was more typical with warm days and cool nights, providing perfect conditions for the developing grapes. Our yields for the season were slightly lower than average and the resulting wines are classic—with complex flavors and our signature brightness on the palate.

Food Pairing
This robust Cabernet Sauvignon pairs exceptionally well with highly marbled steak, like Winery Chef Chris’ Tomahawk Ribeye. This cut of meat is both dramatic and well-balanced and enhances the peppery berry notes of this wine, while the fat elongates its finish. Throw in the roasted potatoes and spinach to round out this dish, and this pairing will take your palate over the moon!
