Nose

The nose is a mixture of sweet and savory aromatics. The cherry tart and fresh plum elements are matched with sage, mint and cedar

Palate

Darker cherry fruit and black pepper are more dominant on the palate. The tannins are soft and balanced with the bright acidity. Cherries dominate on the long finish.

Growing Conditions

2015 was a challenging year due to low yields. We produced a third less of the Spring Street Merlot due to a lack of set during flowering

Harvest

Hand Picked

Winemaking

Once the fruit came in a cold soak occurred for two days. Being valley floor fruit the rollers were fully closed during the crusher/destemming stage to aid in extraction. After 18 days of maceration the wine was drained and the press kept separate. At the second racking the press was blended into this single vineyard wine.

Aging

Aged 22 months in French Oak. 50% new French Oak, 50% once used.
