The fruit was handpicked and carefully sorted. Traditional methods are used to add richness and complexity— aging sur lies for 6 months, stirred weekly; native yeast fermentations and partial native malolactic fermentation to balance the wine’s acidity. The wine was 100% fermented in stainless steel barrels.
