Growing Conditions

The 2009 vintage was a cool and light vintage. Spring rains ended early and the summer saw few warm days. It was a great vintage for winemaking, due to the slow development of sugar and flavor in the grapes. A modest crop came into the winery with great potential that was realized in the bottle.

Winemaking

These dark, inky grapes were hand-picked and sorted before gentle destemming and fermentation in a small stainless steel tank for a total maceration period of 20 days.

Aging

After fermentation, the wine was racked to small, mostly American oak barrels for 18 months to help “tame” the dark, brooding wine.

Appearance

Dark, teeth staining color.

Food Pairing

Since wildebeest is not easily accessible, we suggest you pair this wine with your favorite steak: Porterhouse, New York or Rib Eye. Alternatively, it can be paired with strong, aged cheeses like Vermont Cheddar, Gorgonzola or Camembert.
