Nose

Our 2015 vintage leads with subtle aromas of grapefruit, honeysuckle and bergamot.

Palate

Seavey’s Chardonnay is in the style of a Premier Cru Chablis from Burgundy, crisp and refreshing, with elegant fruit flavors, lively minerality, and light oak structure. Its luscious juicy acidity is infused with lemongrass, guava, fresh ginger, and fresh cut apple, and the mouthfeel is light and delicate, ending with a long and refreshing finish.

Growing Conditions

The 2015 growing season was marked by generally warm weather, limited rainfall, and an early harvest. The resulting yields were lower than average, but this translated into very concentrated wines with lots of personality.

Winemaking

The grapes were whole-berry cluster pressed, and fermented in Burgundian barrels without malolactic fermentation. The wine was aged in the same French barrels for nine months (20% new) before bottling in June 2016.
