Nose

This wine opens up to an elegant nose of lilac and charred rosemary with subtle fennel, lavender, and herbs de Provence. Digging deeper, one encounters lush blueberries, blackberries, and red plums with elusive vanilla, dark cocoa powder and black cherry cola.

Palate

Nothing is left out of the exceptionally savory and balanced palate experience, as the wine features sound structure and a lingering finish kissed with fine tannins. Properly cellared, it will continue to evolve and gain complexity through 2015 to 2022.

Growing Conditions

2007 Pahlmeyer Petit Verdot is a rare bottling, just 40 cases produced. Because of the exceptional nature of the finished wine, a portion was isolated from the portfolio where it is typically blended to add structure to our Pahlmeyer Proprietary Red.

Bottling

It was bottled unfined and unfiltered on April 23, 2009.

Winemaking

The grape clusters were hand-sorted, and once de-stemmed, the berries were sorted again by hand on the way to tank. After four to five days of pre-fermentation cold maceration in small open-top fermentors, the fruit began 100% native yeast fermentation. Two to three weeks later, the fruit was gently pressed and moved to barrel where it finished primary and secondary fermentations.

Aging

The wine continued to age in 85% new French oak – a combination of Taransaud and St. Martin barrels – for eighteen months.

Food Pairing

This wine begs to be paired with grilled lamb with herbs and garlic, porcini mushroom risotto or slightly charred sturgeon.
