Growing Conditions

This 100% Cabernet Sauvignon wine reflects the concentrated depth of flavor and smoothness that 31-year-old vines can produce. From this small, select vineyard, these premium Cabernet Sauvignon grapes were hand- harvested and cellared in French oak. The wine shows exquisite color and balance, has well-structured tannins and a wonderful aroma.

Our vineyard has a unique varietal expression of Cabernet Sauvignon where it makes a very elegant wine. Since the fruit manifests delicate type of aromas and flavors, I try to use fermentation techniques and barrel programs that help these types of flavor develop more deeply and pronounced. In this particular vintage, which had many early rains, I was fortunate to bring this Cab in as planned, but it was a race against time to get the flavors to develop. All things taken together, for this vintage, the focus was on a very food friendly Cabernet Sauvignon with delicate aromas and flavors that keep you guessing.

Fermented 16 days in stainless and then aged in 95% new French and 5% neutral French oak for 29 months.
