Growing Conditions

The fruit for our 2018 Cabernet Sauvignon was carefully selected from prime vineyards
in some of Napa Valley’s best regions, including Atlas Peak, St. Helena, Oak Knoll
and Rutherford. Winemaker Joe Shirley’s commitment to sourcing fruit from the best
regions in Napa ensures a classic wine that showcases the essence of a quintessential Napa Valley Cabernet Sauvignon.

Harvest

The 2018 growing season offered superlative growing conditions with abundant rain at the beginning of the year. Plenty of sunshine and moderate temperatures throughout the
spring and summer led up to a harvest with great crop quality.

Winemaking

The grapes were hand-harvested in the cool morning hours to ensure optimal flavor. At
the winery, the fruit was hand-sorted, gently de-stemmed and lightly crushed. Following
a maceration period to maximize color and flavor extraction and to also polish the tannins.

Aging

The wine was aged in 100% French oak barrels (30% new) for 19 months.

Food Pairing

The finish is polished with well-rounded, fine-grained tannins and fresh, balanced acidity making this Cabernet the perfect pairing for port braised beef short ribs topped with mint leaves.
