Nose
The nose opens with savory herbs, chocolate, roasted notes and cherry reduction.
Palate
The mouth starts with a broad entry and a lot of tension. This wine shows a bit more delicate approach compared to the 2015 but has great complexity and shows seductive, savory flavors with pretty, soft tannins. The 2016 Profile will continue to develop and gain complexity for many years.
Bottling
The wine was bottled without fining or filtration.
Winemaking
Our Profile proprietary red blend showcases the very best fruit from each harvest, sourced exclusively from our gorgeous hillside estate vineyard located east of St. Helena. The grapes were hand-harvested at night in order to get the fruit into the cellar by very early morning and at its freshest. Each block was slowly harvested and the Petit Verdot was co-fermented with the Cabernet Sauvignon to integrate as early as possible. Native fermentation began after a 5-day cold soak and reached a peak temperature of 85°F. Fermentation lasted from 18 to 28 days. The wines were then drained to barrels where malolactic fermentation occurred.
Aging
We aged the wine for 26 months in 75% new French oak barrels from Tronçais in the center of France.
Appearance
The 2016 Profile has beautiful color.
