Palate

A distinct balance of medium-dark fruit tones distinguishes this Cabernet from any other in our collection, with bold notes of boysenberry, cassis, cherry and redcurrant unfurling on a bed of soft, dusty tannins. The lush, fruit-driven nature of this wine and high-altitude acidity provide the finish with a vibrant lift.

Growing Conditions

This Cabernet Sauvignon was carefully selected from Cypress Ranch Vineyard, where high elevation, gently sloping hillsides and a tremendous diurnal shift result in rich, structurally elegant yields. The 2016 growing season was warm and steady – a cooperative spring and warm summer allowed grapes to ripen fully and evenly, allowing us to pick blocks at optimum maturity and complexity. The 2016 vintage offers intense aromatics with outstanding concentration and balance.

Harvest

Our grapes were hand-harvested in late September and sorted at our micro-winery, Cellar No. 254.

Winemaking

Fermentation took place in small open-top tanks, allowing for precise and gentle extraction of color and flavor.

Aging

Each lot was aged in French oak barrels and evaluated individually, with the final blend occurring in August 2017. In total, the wine was aged for 20 months in barrel (84% new) and a year in bottle.
