Nose

On the nose, it is packed with lovely melon and tropical fruit notes, with undertones of fleshy grapefruit aromas.

Palate

This is a crisp and focused wine with refreshing acidity that envelops the tropical fruit flavors with a subtle floral note; enhancing the complex mouthfeel through to the finish.

Harvest

Our Sauvignon Blanc was harvested on August 22, 2016.

Winemaking

Our fruit was whole cluster pressed; and then allowed to settle for 48 hours prior to moving into neutral barrels. Fermentation to dryness then occurred over the next 4 weeks. We avoided malolactic fermentation to retain natural acidity; resulting in crisp freshness.

Aging

The wine was allowed to age in the barrels for another 7 months; and was stirred monthly to achieve incredible richness.
