Growing Conditions
The 2016 Sauvignon Blanc is a comprised blend of three Sauvignon Blanc clones: Clone #1, Liparita and Sauvignon Musque. These three clones offer unique differences in style all with inherent varietal distinction. The exceptional 2016 growing season offered an abundance of sunshine from start to finish, producing wines with great freshness, high concentration of flavor and intense fruit expression.
The Sauvignon Blanc grapes were harvested in the cool hours of the night then whole cluster pressed to preserve the delicate fruit aromas. The juice was cold settled for 24 hours in tank then transferred to Stainless Steel and French oak barrels to undergo fermentation. The juice was fermented cool, aged sur-lies in stainless steel (76%) and French oak barrels (9% new, 16% neutral) for 6 months and stirred routinely to create a long, rich and complex palate with striking varietal character.
