Growing Conditions
The 2013 “S” Cabernet Sauvignon was sourced exclusively from Howell Mountain, ranging from 1,600 to 1,800 feet in elevation. The vineyard sits above the fog line receiving longer sun exposure throughout the growing season. A combination of the high elevation, the red, volcanic and mineral rich soils and a commitment to excellence allows the fruit to achieve full physiological ripeness producing flavorful Cabernet Sauvignon with great structure and exceptional aging potential.
The 2013 “S” Cabernet Sauvignon represents 18 years of the pursuit of quality by the Stotesbery family. The crème de la crème of the vintage, this 100% Cabernet Sauvignon is a selection of 4 barrels, all from a single vineyard block. The grapes were hand sorted, de-stemmed to tank and cold soaked for 5 days to extract maximum fruit characteristics. Gentle maceration techniques were employed throughout the fermentation to insure proper extraction. The wine was drained without pressing and aged in 100% new French oak for 34 months.
