Nose

The Haymaker displays supple aromas of blackberries with menthol, tobacco and spice.

Palate

The wine is fruit forward with ripe black cherry compote, blackberries, currants and spice. Toasty notes and old leather carry you through the firm mid-palate and into the long blackberry finish with hints of cedar.

Growing Conditions

Cabernet Sauvignons from the Calistoga region (located in the northern part of Napa Valley) are some of the biggest and boldest wines in the Napa region. The vines are planted in the rich volcanic bed rock soil which Calistoga is known for, the high daytime and cool night time temperatures provide for intense colors, rich flavors, a touch of acidity and a ton of tannic structure in the grapes.

Bottling

This wine was bottled in the spring of 2016

Winemaking

This long aging produced an astonishingly dense and structured wine. The balance of bold fruit and a firm tannic mid-palate and the long fruit finish makes this wine ideal for enjoying on its own or with thoughtfully prepared food.

Aging

Barreled in 100% new French oak for 40 months.

Food Pairing

Drinking beautifully now through 2025 but will age gracefully for another 10 to 20 years beyond that.

We would pair this with a perfectly seasoned, slow cooked beef rib eye or a fully loaded mushroom pizza from your favorite pizza joint on a Friday night.
