Nose

The rich aromas of Asian pear, ripe apple, and a delicate touch of honey and vanilla greet your on the nose.

Palate

With each sip of wine you get a rich and creamy mousse and some lingering fruit from the nose. This is built on by a bit of crème brûlée and stone fruit layered over black cherry. The finish is long and wraps up with hints of fresh ginger.

Growing Conditions

The 2010 vintage will be remembered as one of the coolest growing seasons on record. Cool weather during bloom caused a light drop and also slowed the ripening of the grapes which delayed the harvest. The combination of a light crop and extra hang time on the vines produced fruit of excellent concentration and character.

Winemaking

Grapes are handpicked and transported to the winery in small bins where they are gently whole-cluster pressed to retain the delicate vibrancy and freshness. Only the first press, with the most delicate flavors and aromas, is used for this wine that is fermented in stainless steel tanks at 55-60°F. After 6 months of first fermentation, the winemaking team assembles the final blend from 14 wine lots. The wine is then bottled and aged on the lees for 5 years to develop complexity and effervescence.

Aging

A delicate five-year fermenting process, each bottle is crafted with the kind of care your most memorable occasions deserve.

Food Pairing

Each glass pairs pairs perfectly with your favorite seafood or a fruity dessert. For seafood try it with oysters on the half shell with a chipotle lime mignonette or classic Maine lobster with drawn butter. It also pairs exceptionally with lemon meringue pie or stone fruit galette with crème fraîche.
