Nose
The 2015 Equitem shows notes of grapefruit, lime, ripe pineapple and wet grass.
Palate
Very complex with nuances of minerality. Beautiful and bright, presenting a fresh palate.
Winemaking
We pressed grapes for this wine at 100 percent whole cluster to impart vibrant fruit intensity. The juice settled for two days before it was racked into a combination of stainless steel, concrete and new and used French oak puncheons for fermentation. We aged the wine sur lie for five to six months, with batônnage (lees stirring) twice a week for the first two months and once a week for the last three weeks. This fully integrated the lees for rich complexity.
