Winemaking
“Nello” is an artisanal estate grown Reserve Blend, including all 5 of the noble Bordeaux varietals.. Entirely field blended, co fermented, and hand crafted with aging in mind. There is much patience that is required to create this wine. First we must wait to see if mother nature will provide us with all 5 varietals needed to produce this wine. Then we hand pick and sort all the fruit to make sure only the best berries make it into fermentation. Then we wait, for nearly 3 years, while it ages in French Oak barrels to produce the right balance of flavors. Finally we bottle and allow the wine almost a year to settle in before we release.
