Winemaking

This wine was barrel fermented and aged using old world, traditional methods. The primary and subsequent bottle fermentations were carried out very slowly. Bottle aged at least 5 to 10 years before disgorging it receives only a small dosage of sweet liqueur to flesh out the texture.

Aging

8 months in 100% French Oak.
