Palate

The result is a combination of aromas and tastes that remind of sweet Meyer lemons, crème brulée, pear compote and warm biscuits. A touch of minerals adds to the steely but silky texture reminiscent of classic white Burgundy.

Growing Conditions

Influenced by the Pacific Ocean breeze and fog, their vineyard enjoys a cool microclimate, which encourages a longer growing season for the grapes. This means greater overall maturation and full ripe flavors in its Chardonnay.

Winemaking

The Chardonnay is barrel fermented utilizing natural wild yeasts and then barrel aged on its lees in 100% new French oak for 10 months. Stirred to increase yeast contact and add richness to the mouth-feel, this wine also completes malolactic fermentation in the barrel. Only a light filtration before bottling is preferred to retain rounder flavors without bitter aftertastes.

Food Pairing

An elegant accompaniment to prawns or lobster or if preferred a rich salmon grilled in a light teriyaki sauce will do well. A truly versatile wine to be enjoyed on its own or paired with your meal.
