Palate
This 2017 PEJU Cabernet Sauvignon is a vibrant representation of a Napa Valley Cabernet Sauvignon. After aging 18 months in French and American oak, this wine opens with notes of tobacco, clove, and leather. Ripe plum and back cherry lead to a gripping juicy palate. Black fruit compote is expressed as the tannins showcase depth and power. As this wine opens soft hints of Herbs de Provence being to show. This Cabernet Sauvignon dazzles and pairs well alongside many culinary treats, and is cellar worthy for the next 8-10 years.
Growing Conditions
Persephone Vineyard is our 350-acre estate in the heart of Pope Valley, a largely undiscovered grape-growing region in the northeast corner of Napa Valley. The ranch is planted with 130 acres of vines, which includes our Bordeaux grape varieties as well as Zinfandel, Sauvignon Blanc, and Chardonnay. At nearly 1,000 feet elevation, the area is characterized by wide temperature swings and little fog, which allows for a consistent growing season and produces fruit with rich, focused flavor, and a precise sense of place. Persephone is sustainably farmed, moving towards organic certification.
Harvest
2017 began with abundant rainfall, followed by a mild Spring resulting in extended flowering. A Labor Day weekend heatwave kicked harvest into high gear, then cool weather allowed sugar levels to return to normal. The 2017 vintage wines display “finesse,” “great complexity of flavor” and “elegance.”
